Lemon Syrup


With warmer days comes lighter recipes.  Spring is the perfect time to try out new toppings for pancakes and waffles.  We make our own pancake syrup using sugar, water and maple extract.  Sometimes we change the flavor with a different extract.
Lemon flavored syrup is a delightful change from the traditional maple and goes perfectly with Light and Crispy Waffles found over at Ourbestbites.

 
With only three ingredients, this recipe is easy enough for your kids to try.  Just be sure to not leave the kiddos unattended while they are using the stove.  :)

 Light and Lemony Syrup
2 cups sugar
1 cup water
1/2 tsp. lemon extract
Bring sugar and water to a boil in a small saucepan.  Remove from heat.  Stir in lemon extract.  Serve over pancakes or waffles.

And if you are not opposed to food coloring, a touch of yellow makes it look "lemony". I'll have to try lemon syrup--I've made maple syrup for years.
